You can use crackers or oats. The Cheerios would work if you grind them up (it doesn't matter if they're stale, you just need them as a binder). The chips would be good and give the meatloaf an extra onion flavor.
Also, you can just leave out the bread, crackers, etc. completely and just add an extra egg to bind the meat.

The stale Cheerios really wouldn't be all that bad! Do you have any onion soup mix? If you have any Hamburger Helper, you can use the mix out of that. (Use the Cheerios with the packets. I have done that before.) You can always use the noodles for something else. I'm with you on the rice. Yuck! Or make hamburger steak. You make it just like meatloaf, but you fry them like a burger. Serve with mashed potatoes and gravy with a veggie and dinner is served! Just a thought. I hoped I helped.

I use this recipe at my bistro
just takeout the breadcrumb parts
Enjoy !
This meatloaf is made with a variety of chopped vegetables and tomatoes, along with Cajun seasonings and bread crumbs.
INGREDIENTS:
1 to 1 1/2 pounds lean ground beef
1/2 pound ground pork or more beef
1 large egg
1/3 cup finely ground bread crumbs
1 medium tomato, seeds removed, cored, finely chopped
1/4 cup onion, finely chopped
1/4 cup red bell pepper, finely chopped
1/4 cup celery, finely chopped
1 1/2 to 2 teaspoons Cajun or Creole seasoning mixture
1/2 teaspoon salt
dash pepper
2 teaspoons Worcestershire sauce
ketchup or chili sauce, optional
PREPARATION:
Combine all ingredients except ketchup or chili sauce; pack into a loaf pan or meatloaf pan, or shape into a loaf shape and set on a rack or crumpled foil on a shallow baking sheet. Try to keep it out of the drippings with a piece of crumpled foil or a wire rack. If desired, spread ketchup or chili sauce over top about 10 minutes before done.
Bake at 350° for 60 to 70 minutes.
Serves 4 to 6.

Use about 1/2 cup filler per 1 pound of meat. Bread crumbs from hot dog buns, bagels, biscuits or muffins, oat bran, grated potato, grated carrot, mashed potatoes, crushed pork rinds, shredded cheese, Stove Top stuffing mix, hash browns or just add more veggies.
EDIT: Some other things I thought of are Cheez-its or pretzels or maybe some kind of dry pasta like crushed up spaghetti noodles or macaroni. I wonder what would happen if you simply used a couple of tablespoons of flour or Bisquik? I'd be curious to know what you end up using and how it turns out.

You don't always need bread or any wheat product in your meatloaf. There are many recipes out there that don't require you to add any.
With enough seasonings and some ketchup (or catsup) you can pull off a meatloaf with no bread products.
Try it without the bread.
Also, trying baking the meatloaf in a cupcake pan. They bake faster that way. It makes for a short and quick meal.
Good luck!!

Pretty much any starchy filling will work.
My sister made a meatloaf once using Cheetos because that's all she had available at the time. It turned out to be quite good.
I'd give the potato chips a try.

Do you have any Stove Top stuffing mix? I know it's preseasoned, but I've used it before - even the chicken flavor in a ground beef meatloaf.
If not, use bread crumbs, cracker crumbs, or even cheerio crumbs would be OK. I usually use bread crumbs if I don't have bread.

You could use oats or bread crumbs if you have some. If nothing else, I would crush up those cheerios and use them. The fact that they're stale won't matter anyway.
