Depends on the major you choose. You'r degree will almost always count if it is a Master's degree, bachelor's degrees are more difficult to be accepted but not impossible. Dentistry will not count. Medicine yes...etc
I got my masters in Technologico de monterrey and I didn't have any problem getting it registered in the U.S.,

my boyfriend when to tech de monterrey and majored in international business. tech is one of, if not the BEST school in mexico.
the degree will be recognized in the US, and you can apply for an MBA here, with a bachelors done in mexico. however....you have to be careful about choosing your classes. the reason is their international degree....means talking about the United States! and of course Europe etc.. so, in a sense, you will just be getting a plain business degree, because they spend a lot of their time talking about the US.
this being said...is there a reason you want to go to college in mexico? if you want to work in the US, it's best to go to school in the US. if you want to work in mexico, it's best to go to school in the US. the school is very very good, and it's not that the quality of education would be lower... but when everyone is looking for an american education, and you can have one.....why wouldn't you want one?

It will depend on the company that hires you what they think of your credentials. If you were going for another degree when you came back you would need to check with the graduate degree institution. If it requires a license of any sort (you aren't clear on the type of job) it could be an issue you should check out with the licensing authority.

Depends what it's in . I assume depending on the type of law, a lawyer would have to know U.S law to practice here. A doctor would probable be tested in the U.S. before getting a license here. Education is free, but like my ssiter who went to law school she had to pay it back by working for the Government.
