take i stick of butter and melt it in a saucepan. add 1/2 cup of hot sauce ( i like texas pete) and add 1/4 cup of worshershire sauce. Melt all together. Dip your raw wings into this mixture, and place on a baking sheet. Sprinkle dry ranch salad dressing mix onto the wings. 1 packet should work for about 15 wings ( 2 packages) Then bake at 450 degrees for 10 miutes, turn and bake another 5-10 minutes until crispy. Be careful and drain off the grease while cooking. this recipe is a bit healthier since you're not frying the wings.
you can add more tabasco or other hot sauce if you like your wings hotter. This makes a cripsy spicey wing

I've been eating wings for almost my entire life - I live in western NY, and have family in Buffalo - so, we know good wings.
Fry - don't bake the wings. (usually 4 or 5 minutes)
While they are cooking, melt 1/2 stick of butter mixed with 1C Tabasco sauce. Pour this over the wings after they've drained for about 1 minute - but are still hot. Coat the wings with the sauce, and serve with celery and Bleu Cheese mixed with some butter milk - just to thin it out a little.

Buffalo sauce is put on chicken wings, that is why it is called buffalo wings.
The sauce
2 tablespoons all-purpose flour
2 1/2 ounces unsalted butter
1 1/4 pints crystal Louisiana hot sauce
1 1/4 tablespoons peeled garlic
1 1/4 tablespoons champagne vinegar
Melt butter and saute garlic for 3 minutes. Add flour and stir, making a roux and cook for 5 minutes, stirring. Slowly add the hot sauce, while whisking constantly to avoid lumps, and add vinegar. Put on low flame and cook until thickened and the roux has cooked out. Cool and pack for transport.
Toss the wings with the sauce and put in a 350 degree oven until done

Buffalo, NY makes that claim, however , they were being served in bars and pubs in the western part of the country before Buffalo NY ever heard of them. The original source probably will never be known, just like the jackalope.

"This is the similar to the hot wings recipe served at a popular restaurant chain. If you have ever had them, you have to love them."

COOK TIME 15 Min
READY IN 2 Hrs
INGREDIENTS
oil for deep frying
3/4 cup butter
3/4 cup hot sauce
3 dashes ground black pepper
3 dashes garlic powder
1-1/2 cups all-purpose flour
3/4 teaspoon paprika
3/4 teaspoon cayenne pepper
3/4 teaspoon salt
30 chicken wings
DIRECTIONS
Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

Bill's Blue Cheese Dressing
Original recipe yield:

INGREDIENTS
3/4 cup sour cream
1 1/3 cups mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 ounces blue cheese, crumbled
DIRECTIONS
In a large bowl, whisk together the sour cream, mayonnaise and Worcestershire sauce. Season with mustard, garlic powder, salt and pepper. Stir in blue cheese. Cover, and refrigerate for 24 hours before serving.

Take the skin off the wings .. wash them with a little lemon juice .. pat them dry. Season with salt and black pepper.
Deep fry until golden brown .. Mix 1 cup of melted butter with your favorite hot sauce and toss the fried wings in it until well coated.

Buffalo Wings:
Prep: 35 min.; Bake: 1 hr., 5 min. You can bake both pans of wings at the same time. Just switch rack levels and turn pans halfway through the baking times. To make the wings spicier, add more hot sauce here or at the table.
6 pounds chicken wings*
4 (0.7-ounce) envelopes Italian salad dressing mix, divided
1 cup butter, melted
1 to 1 1/2 cups hot sauce
1/4 cup lemon juice
1 teaspoon dried basil
Ranch dressing
Cut off wingtips, and discard; cut chicken wings in half at joint, if desired. Place 1 package Italian salad dressing mix in a large zip-top plastic bag; add half of wings, and shake to coat. Arrange coated wings in a single layer on a lightly greased rack in an aluminum foil-lined 15- x 10-inch jelly-roll pan. Repeat procedure with 1 package Italian salad dressing mix, remaining half of wings, and another jelly-roll pan.
Bake at 425° for 35 minutes or until browned. Remove pans from oven, and reduce heat to 350°.
Stir together remaining 2 packages Italian salad dressing mix, butter, and next 3 ingredients in a large bowl; add wings, and toss until evenly coated. Return wings to racks in pans, and bake at 350° for 30 more minutes. Serve with Ranch dressing.
*2 (3-pound) packages frozen party-style chicken wings, thawed, may be substituted.

I coat my wings in hot sauce(Texas Pete) and them roll them in flour or seafood batter. I then deep fry them in oil until done. After I dry the oil off, I coat them in more hot sauce and serve with ranch dressing. They are awesome.

You do everything the same instead you season them with hot sauce put them in oven when they are done umuuuuuuuuuuuuuummmmmmmmmmmm!!!!!!!!!!!!!!!!!!!!!!!!
