The trick to making cripsy fries is to blanch them first ( by cooking in oil at a low temp ( 300 degrees) for a few minutes) about 3 minutes. then draining them and after they are cool,frying them again at 375 degree oil. This produces a cripsy outter crust and a soft fluffy inside that we love in fries.
You can also do this with frozen fries, but it's much better with fresh potatoes.

In a large bowl, cover the potatoes with water.
In a deep fryer fitted with a basket or a heavy medium saucepan, heat 3 inches of vegetable oil to 340°F.
Drain the potatoes and pat dry with paper towels.
Add half the potatoes to the oil and cook until they begin to blister and turn golden, about 15 minutes.
Shake up the basket every once in a while (not too often – especially in the beginning when the fries are still soft), or run a fork through the saucepan to make sure fries are not sticking together.
Spread the fries on paper towels to drain and cool.
Repeat with remaining fries.
(Fries can be made to this point up to 4 hours in advance of serving).
Heat the oil to 375°F.
Add a quarter of the fries and cook until browned and crisp, 1 to 2 minutes.
Drain on paper towels and repeat with remaining fries.
Sprinkle with sea salt and some oregano.

I am no good at making crisp french fries. I have tried soaking and drying them beforehand. I have used a deep fryer at 375°, all to no avail. Yet I voted YES to the long post from Cister, and the tip from mealcooker about the flour, and kimberc13 because of her tip about double frying which is common in Chinese deep frying recipies. I've seen all of these tips in cookbooks. My mom claims the frozen french fries for deep frying will come out crisp, but I have not tried them.

Soak them in some water with a bit of vingar. Completely dry them and then fry at the right temp.
375 degrees sounds about right.

well, if you have frozen fries and want to bake them and make them crispy, put some oil on your cookie sheet and roll them around in it - bake at 500 until crispy
if you have raw potatoes, slice them into fries and coat with beaten egg white- then coat with parmesean cheese- drizzle LIGHTLY with olive oil and bake at 500 until crispy

If I make homemade fries I cut them and then put them in the fridge for a while unitl they are cold...pat them dry if any moisture on them and roll them in coarse salt then deep fry. Good Good!

They will get nice and crisp if before frying you shake them in a bag with a little flour........ not too much or you won't like the result...just enough to take the moisture from the potato.
Also, be sure your oil is HOT

u can deep fry them and they come out crispy or do what my mom does buy the ones that come in the microwaveable box. they are acutally very very crispy!!!
