Skunked beer is caused when ultraviolet light reacts with the hops acids in the beer. It is not caused by old beer. It is not caused by storing the beer warm.

It is caused by UV light only!

Now here's my question: Where are you idiots getting your stupid information from about skunked beer?

That's a somewhat simplified view of what's actually happening. The uv light excites electrons in hop resins, creating very short-lived free radicals, which then degrade into a "skunky thiol", 3-methylbut-2-ene-1-thiol, which is chemicaly very similar to compounds found in skunk urine.

However, electron excitation is a statistical game. At any given moment, there is some chance, no matter how small, that an electron will acquire the energy to jump to its excited state. The uv light just ups the probability by many orders of magnitude, by kicking additional energy into the system. Other energy sources, such as heat or increased pressure or even mechanical motion, like shaking or stirring, will also increase the odds of any particular electron reaching its excited state- if not nearly as much as uv light will.

And even without any other factors, some small percentage of electrons will will make the jump in any given time frame. The longer you wait, the more times this will happen. So old beer gets skunky, beer that's stored hot gets skunky, beer that's shaken gets skunky...

Just not as fast as beer that's exposed to uv light.

I think its because of that Budweiser ad campaign from about 4 years ago. They started labeling the beer with a 'born on' date, and suggested that if beer was old, then that was what caused it to be 'skunky'. I believe they did this to counteract the consumer trend toward less mainstream beer. Because Bud is one of the best selling beers in America they can be sure of more turnover in stores and 'fresher' beers on the shelves. Microbrew and imported beer has less turnover and will sit longer on the shelves. Therefore if in consumers' minds old beer is worse than new beer Budweiser instantly gains the advantage.

i don't believe u. I have had beer that was previously cold, left in a the trunk in my car and then rechilled. It was skunked. Don't tell me it was skunked before I put it in there, because I know it wasn't.
