can nitrates and nitrites be avoided by grinding fresh pork from the butchers to make your own sausage?

Nitrates are typically added to pre-packaged food, so if you grind your own pork or even buy ground pork and season it yourself you should be able to avoid this preservative.

Not unless you go organic.

The nitrates come from the steroids and antibiotics the poor pigs are fed in order to keep them living in such squalid conditions.
