There are so many meanings for the word "scallop" so I am not surprise you are confused. There is also another word which is used refering to the cut of the meat. I will give both anyway- this might help.
Escalope: A French term for a cut of meat or fish that has a flattened shape or is very thinly sliced. An escalope is usually very tender and requires only a few seconds of sautéing on both sides.
SCALLOP:
To bake a food, usually in a casserole, with sauce or other liquid. Crumbs often are sprinkled over.

Scalloped Chicken

A creamy comfort food! A great way to use up left over chicken or turkey. YUMMMY! Serve with hot rolls and a bit of cranberry sauce on the side.
6 servings 45 min 5 min prep
2 cups breadcrumbs
2 tablespoons unsalted butter
2 tablespoons onions, chopped
1 1/2 teaspoons poultry seasoning
1/4 teaspoon salt
2 cups cooked chicken, diced (or turkey)
FOR GRAVY
4 tablespoons butter
4 tablespoons flour
3 cups chicken stock, heated
2 eggs, beaten
salt and pepper
Make gravy first for it needs to cool a bit.
In saucepan over medium heat melt the 4 tbsp of butter.
Blend in flour and hot chicken stock.
Stirring until thickened.
Season with salt and pepper Remove about half the gravy from saucepan and stir in with the beaten eggs.
Return the eggs and gravy mixture to saucepan and cook 2-3 minutes more.
Set gravy aside to cool.
In pan melt the 2 tbsp of unsalted butter and toss in the bread crumbs.
Cook on low for 2-3 minutes.
Stir in onion, poultry seasoning, and salt.
In 8"X8" greased casserole dish add a layer of crumb mixture, then chicken, then gravy.
Repeat again but ending with last layer of crumbs.
Bake in preheated 350 over about 30 minutes.

My sister made this one week-end when we had been out shopping all day. It was really nice to come home and just eat. Serve with a salad and some crust rolls and you are good to go!!
4-6 servings ½ day 10 min prep
4-6 boneless chicken breasts
1 (10 ounce) box scalloped potatoes mix
10 ounces frozen green beans
1 (6 ounce) bag baby carrots
1 medium onion, sliced
1 1/2 cups water
In crockpot, layer in this order.
Potatoes from package, seasonings from package, chicken breast, onion, green beans, and carrots.
Pour water over everything.
Cook on low for 8-10 hours.
