A stone fabricator would be able to polish and buff the edges for you but I'm not aware of any other way to do it with out the proper equipment. I assume that you are installing a granite counter with granite tile. You can cut a piece of the tile to fit on the edge with the polished side facing out. Some people also use a wood trim to conceal the edges. It's aslo possible that if you make a trip to the homecenters you may be able to to find a product that can polish granite but it doesn't seem likely to me. Polishing stone requires alot of abrasion or buffing. Like a rock tumbler.

The same way the stone polisher did it. Fine grind and lots of work.
Most tiles come with finished edges or edging tiles, some come with nosing tiles, like quarter round.

Polishing the edges is possible, but it's not easy. You will need a dremel or I prefer a roto-zip ( has higher speed ) Dremel makes polishing attachments. Use these attachments with rubbing compound, or a natural stone polish sold in the flooring sections of your home centers. Once you achieved the shine, seal it with a stone sealer. Be patience, it will take some time.

Take them to a glass/mirror shop, they can polish the edges for you.
