Just 106 calories

Pumpkin is my favourite

2 eggs
60 g pumpkin (cooked)
30 g baby spinach
3 cherry tomatoes
20 g ricotta cheese

beat the eggs slice the pumpkin chop tomatoes in half
pour egg mixture into a frying pan lay pumpkin, spinich and tomatoes on top, break up ricotta cheese and spread that over everything fold it over and place it in the oven for 10 minutes
its nice with a bit of grated cheese over the top as well.
for a nicer presentation if you push the pumpkin along the top of the folded omelette before it goes in the oven it crisps it slightly.

Well, I have a hard time finding a place that cooks the way I like my food. I prefer a homemade omelette. That way you at least get whatever you want in it.

For vegetarian: Tomato and curd omelette; diced mixed vegetables omelette; cheese and potato omelette. Or just simple sweet basil leaves and garlic and onions omelette.
For non-vegetarian, the above mentioned by adding meat or seafood of your choice.

ham and cheese.......as long as the ham pieces are little.
Don't go to a pancake house for an omelet. They don't make them right. They put everything on top instead of inside. A regular family restaurant is the best choice.

Perkins used to have an omelet that was to die for.

They don't make it anymore - but they do have a 'build your own omelet' option on their menu.

It had hash browns, 2 diced sausage links, cheese, and sausage gravy in the omelet, topped with more gravy and cheese. YUMMY!

Another one - that they don't make anymore - was their Chicken Fajita. Seasoned Fajita chicken, salsa, green peppers and onions, cheddar cheese - topped with more salsa, cheddar cheese and sour cream. Served with a side of salsa and cheddar cheese.

I spent a summer making omelets for Perkins - if you couldn't tell. :)
