can I make them up and store them in the fridge for 8 hours or so then wake up the next morning and cook them so that they will be hot for lunch? My hubby says he thinks the Maseca mix will go bad overnight if not cooked right away b/c there are no preservatives in it, but I think if it is put in the fridge below 40 degrees it should be ok.........please help if you have ever stored them and cooked the next day let me know how they turned out. Gracias!!

The problem is actually with something called carryover cooking. It is important that the tamales cool completely to room temp. before refrigeration. The AMA says that 70% of food borne illness is actually caused by improper food storage in this respect. Never ever put hot or warm food in the fridge, it creates botulism.

They will be fine to cook the next day. The fridge will keep them from spoiling over night.

When my wife makes them, she freezes them prior to cooking and they turn out great, so I don't think a night in the fridge will be an issue.

They will keep for several days in the fridge. Having been cooked they will be sterile. Cold sausages are delicious.
