I bought a $100+ professional stainless steel frying pan, because I was tired of oil beading up in my teflon one. I'm able to fry most things (like french toast, pancakes, etc.) without any sticking at all--just making sure the pan is hot enough and has enough oil in it. But when I cook eggs at a high temperature (i.e. I strongly feel the heat emanating from the pan when I hold my hand over it), they form a lot of bubbles on contact, almost as if they foam up, and I really need to scrape them off afterwards, leaving lots of residue that I have to take steel wool to. If I cook them at a lesser heat (using butter not oil, because at the higher heat the butter burns) the eggs become completely stuck to the pan. Does anybody have any advice please?

have the oil really really really hot. that's when you put the egg. it will cook very fast. once you see the white cooking, its ok. its done. it wont stick.

Well dang that more than i spent on my whole cooking set but to help you out try pam cooking spray to help the eggs not stick if that doesnt work and you already said no to butter, if you are doing this at home i would say go buy a cheap but good quality nonstick pan and use it for eggs only and as far as oil build up thats a first for me i dont cook with many oils in my nonstick pans but i have used nonstick pans for 10 years and never had that happen if it occurs in the egg pan then wipe it out with a paper towel while still hot and then rinsing with water and washing my pans are kitchen aid so if you cant use oil like it moves the eggs too fast thru system and dont want darker eggs from butter get a small nonstick for these occasions professional pans like that arent great for everything do hope i could help and best wishes in the kitchen

Your temp might be too high, if you pan was $100 then usually good quality holds heat better on the bottom, I would suggest lower heat and slowly.....patience I guess:) Depending on how you like your eggs, I find that lower heat, and throwing a glass lid on top will cook an egg more evenly and you are sure not to have any slime, as sometimes it seems the bottom cooks faster than the top if you are doing sunny side up. With a glass lid the steam helps to cook evenly, but you can also see when to take the eggs off the pan. Good Luck! Hope this helps.

The best option is actually a vegi oil and butter combo. The oil gets to hot alone and the butter wont get hot enough (without burning). The combo works well. Second, are you flipping too soon? When the protein is ready it will separate from the metal (this is true for any protein from burgers to fish). I always cook eggs on non-stick for this reason, you have to babysit it and will still stick. Try the butter/oil combo. Good luck!

try seasoning your pan first - heat it up dry cover base with salt then leave for about2 mins use cloth or kitchen roll to clean then put in oil and heat again when you can feel heat with hand three inches above drop eggs in and turn down heat slightly do not touch eggs until bottom is cook then shuffle the pan flick oil onto top egg cooked to perfection enjoy. never wash a stainless steel pan just wipe with a clean damp cloth or kitchen roll

I spray the pan with Pam or any other cooking spray, heat the pan up at a medium high heat ( about #6). This seems to work for me when I am at my mother in laws house, she doesnt believe in non stick, lol.

I think Shadowbear is on the right track. The way to do it is to face reality and get a Teflon pan. Also a nylon spatula to go with it. Together, this should cost about $20 or less in the supermarket. With Teflon don't exceed medium heat.

don't use oil with eggs ewww use butter just keep stirring for the eggs won't stick thats what I do
