Brewing yeast is used to ferment the mash of hops, barley. The yeast eat the sugar and produce alcohol and CO2 gas.

Sometimes other grains are used but it is not in the official recipe from Germany.

some convert more starch to sugars others may provide nutrients for the working yeasts or flavors that we enjoy...don't really think anyone cares as long as it's cold and available!
