A strong mature Cheddar is my favourite, sometimes with a little crumbled Stilton or Parmesan added for a change.

Yes there are better cheeses, but the best one for cheese on toast, is without a doubt, MATURE SCOTTISH CHEDDAR.

Try Tintern cheddar with chive and onion (available at Tesco's cheese counter!) which is REALLY tasty, or as Mymagicshowuk says, Mexicana, it's cheddar with chilli!

I'm a Mature chedder person myself.... But squeeze a little lemon over it before you eat (after toasting) for best flavour and it cuts the fatty taste too!

YUM!

Definitely mature Cheddar for 'meltability' and taste. A splash of Worcestershire sauce on top - bliss!

Cheddar, every time. Eat with a little HP spread on top. Have you tried putting a slice or two of tomato on top too?

Hmm I personally love Muenster.

Also Asiago, it's a hard cheese and is usually grated however I love it sliced!
