Prawns are particularly fiddly to peel, yet the bags of shelled prawns that you buy in the supermarkets, have no shell or innards left on them. It has always mystified me !

There is a knack to it,(see previous answers) the more you peel the quicker you get.The small ones (shrimps and prawns )are hand picked. The bigger scampi, crayfish types can be cleaned using a machine which basically blows them out.We have a shrimp boat and we pick millions ,it takes forever. They have to be boiled right. If they are over cooked they squash when you try to pick them --if under cooked the shell won't come off. That is why locally caught shrimps and prawns are so expensive

They are not exactly peeled. Each prawn has the head end broken off by hand, and the remaining tail puched onto a thin pipe - the meat is shot out of the shell by compressed air. All the peeled prawns are then sprayed with ice cold water before freezing. The reason for the water spray is two fold -
1 It cleans the meat of any remaining debris
2 selling water plus prawns provides a higher profit margin than selling just prawns!

You grab the body of prawn firmly. First you peel off the head. Most of the innards should come off with the head. Then you gradually peel off the upper half of the prawn. Then you firmly pinch and pull on the tail and it should slide off.

To get the vein out, you hold on to the tail and a firm but gentle tug on the vein should get that out too. Alternately, you could butterfly the prawn and get the vein out in this way too.

It is a bit difficult initially. But once you get used to it, its as easy as peeling an orange
