I guess she wants to reassure her love for you. She wants to let you know that the other guys do/did not matter......or maybe she's reassuring herself. Trying to convince herself that they didn't matter.
Either way I think you should sit down and talk with her...tell her whats on you mind. Communication is the key to any relationship!

because at the beginning of this relationship you probably let her talk about her ex's and now she's trying to reassure u that she does love you because the conversation is not the same as it was at the beginning.................you already know why she does it you just need confirmation

Because, she feels guilty about doing the guy. She wont tell you cause she feels guilty.

she doesnt want you to get pissed because she's talkin about another guy so she tries to assure you that she loves you and not some other dude
