or special fried rice,every time ive tried to make this it always turns soggy,how do the chinese takeaways get it so yummy?

Use cold steamed rice. It doesn't get mushy when you fry it. That is what they use at japanese steakhouses.

As far as I know, there a couple of things that make Chinese fried rice special and that is they use soy sauce and rice is kepted in the fridge one day before actually making the recipes. The reason for this is that is that the rice doesn't clump together as easily as it does when it is cooked same day. Actually, this whole recipe was made by wise Asian housewives in the past who made great meals such as Egg Fried Rice from leftover rice the day before. Rice being the main meal, indeed if you didn't eat rice, you didn't eat food. Also, it depends on the type of rice used, some people used Jasmine rice or Japanese Medium grain rice.

Some tips for you:

Basic ingredients


Shallots – it imparts the important aroma in the every fried rice. Always fried the shallots first, till slightly brown, then add the rest of the ingredients.

Onions – in addition or in absence of the shallots, this could be a good substitute. Brown the onions well too.

Garlic – it is one of the essential basic ingredient in every Chinese cooking.

Eggs – it is this that is an essential to seal in all the flavours of the fried rice. The secret is to throw it in at the end, mix thoroughly with the fried rice and the flavour is sealed in with extra kick!

Meat (making the fried rice tastier)

Meat gives fried rice its sweetness and the full flavour of it. Though not necessary, but with it, your fried rice would be more tasty and would include the protein.

Or:

Chicken– boneless chicken are sliced and dice into small bite sizes to be used in fried rice. This is the most common meat.

Or:

Prawn – this is actually the secret to a real fried rice fragrance and tastiness.

Vegetables:

Veggies are good additions to fried rice to add in the nutrition and also making it more complex in tastes, textures and presentation.


Long beans – these veggies pack a good crunch to the fried rice, thus bringing the texture to the whole new layer. It is just right with the fried rice.

Carrots – carrots also pack a good crunch to the fried rice. Have it sliced thinly or finely chopped. These add good colours to the fried rice.

Spring Onions – It is usually used for garnishes in dishes, in this case it is a good addition to fried rice, especially good with the brown ones.

Herbs –add in any herbs you think is right, like fresh Chinese parsley, or basil.

Soya sauce – main base for the saltiness in the fired rice. seldom salt is used in this.

I always pour the egg mixture in the wok or pan first. When the egg is almost cooked,then I add in the rice and other ingredients. Otherwise, I think breaking eggs on the rice itself will result into stickiness.

You might try a combination of oils- a couple drops of sesame oil in a cup of vegi oil ought to do it.
fry the eggs in the rice, use butter, salt, and pepper...

use cold rice. refrigerated leftover rice from the night before should do fine.
