Potatoes, Broccoli and cauli all absord alot of flavour from the spices.
Although, do part boil the potatoes and if you are cookig a curry or the like, make sure there is enough sauce to effectively cook the veggies in as the flavour is then absolutely fab

Potatoes....Turnips.....Turi....Dudhi.....Methi. Fenugreek) ....Spinach (palak) ...peas......french beans.....Onions with Capsicums.....Carrots with Peas.....Bindhis (Okra) Drumsticks (not the chicken the long legume with a hard outer surface that has to be taken off)...Tindla....there are two sorts one looks like a green apple and the other little bullet shaped vegetables dark green in colour. Cauliflower, Cabbage . Why not go to an Indian market in Southall....Hounslow...or Wembley
you will see everything there. Are you making something nice? Spinach with chana dahl and sewri ( that feathery herb...dill )LOL.

Potatoes and squash work well with spices. Mushrooms are good as they absorb the flavour of the spices

Cultures that use strong spices in their veggie dishes use a lot of okra (Ladies' fingers), aubergine (egg plant), tomato, long beans and pulses (lentils). Chick peas are also good with curry spices.

Aubergines can be complimented well with spice. The meaty texture benefits from strong flavour.

My guess, look what the Indians cook with. My suggestion is potatoes. Eggplants also seem to work. Frankly go peruse through Indian cookbooks or surf the net and see what southern Asians eat.

i normally use cauliflower with strong spices,baby corn usually work pretty well with them too
