Cathay Pacific will sometimes offer free stopovers in Hong Kong, as Hong Kong is their hub, and almost all their flights to Asia go through Hong Kong, depends on the restrictions placed upon the ticket you buy. They definitely do not give you free hotels, transfers and breakfast, you can buy packages that include the above, but they are not free. Check out their website, either www.cathaypacific.com or www.cathaypacific.com-usa.
There are plenty of things to do in Hong Kong, eating and shopping being the most popular, any visitor should enjoy the views from Victoria Peak(take the tram), ride the Star Ferry, check out Stanley (on the quiet side of HK Island), explore one of outlying islands (Big Buddha on Lantau Island is popular). There's just too many things to list here, go the the Hong Kong Tourist Association website, they can help you more than I can. Good luck and have a good trip!
