Actually you are all only partially correct. There is a nerve in the roof of our mouths called the spheno-palantine ganglion. When it is stimulated by cold it causes a reaction in the blood vessels around your brain, making them swell. Swelling veins are our bodies way of quickly increasing warmth spreading blood flow. Of course the rapidly swelling veins are painful to us causing a headache. To alleviate the brain freeze simply warm up the roof of your mouth by either pressing your tongue against it or drinking a warm fluid.

Its call brain freeze. When u have somthing utterly cold, due to the fact that it is much less a temperature than ur body, your head begins to chill, this in some cases causes headaches especially for people who have sinusitis or migrane

because the coldness of ice cream clashes with the warmness of your blood,decreasing the size of your blood vessels ..causing the headache..the colder the worse..and headfrezze headaches can rarely cause death sometimes.
