I was thinking about producing my own break and baked goods for a bakery. To keep costs cheap, I want to grow my own wheat to make the goods with. How much wheat would I need to grow to make a loaf of bread? How about a hundred loafs of bread?

How much wheat will produce how much flour???

IF I REMEMBER RIGHTLY---A BUSHEL OF WHEAT WEIGHS 45 LBS. & COULD MAKE ABOUT 65 LOAVES OF BREAD @ NORMAL FLUFF BREAD MOISTURE OF 38% ...THE MOISTURE CONTENT IS LOWER FOR HEAVIER BREAD ABOUT 55 LOAVES PER BUSHEL....USING 1# AS MEASUREMENT.....AS TO ACREAGE FOR WHEAT 40 TO 80 BUSHELS PER ACRE SEEMS ABOUT NORMAL---FROM SOMEWHAT POOR TO VERY FERTILE GROUND....IT WOULD BE FAR CHEAPER FOR YOU TO HAVE SOME MILL TO CUSTOM GRIND YOUR FLOUR---SMALL MILLS WILL DO THIS TO YOUR SPECIFICATIONS--WITHIN REASON .,YOU CAN ALSO CHOOSE WHAT TYPE OF WHEAT YOU WANT FROM DIFFERENT MILLS TO ATTAIN THE BEST DOUGH CONSISTENCY FOR YOUR SPECIAL LOAF INGREDIENTS..........SPECIALTY BREAD IS THE ONLY WAY TO GO FOR A SMALL PRODUCER TO HAVE A UNIQUE NICHE.......BECAUSE FLUFF BREAD PRODUCERS CAN MAKE THOUSANDS OF LOAVES PER HOUR ....YOU WOULD NOT BE ABLE TO COMPETE HEAD TO HEAD....THEIR FAST MACHINE OVENS CAN EASILY RUN INTO SEVERAL MILLION $.....BUT THERE IS A BIG MARKET FOR EUROPEAN TYPE BREADS.....I LOVE SODA BREAD FROM IRELAND......& SOUR DOUGH-RYE BREAD..........I WISH YOU THE BEST---THE MORE WHOLE WHEAT YOU USE THE HEALTHIER OUR NATION WILL BECOME......WHEN THEY STRIPPED THE CORE & BRAN COMPLETELY OUT OF FLOUR TO HAVE LONGER SHELF LIFE FOR FLUFF BREAD---OUR NATION IN 100 YRS. HAD MILLIONS & MILLIONS MORE DIABETICS----THE ZINC & CHROMIUM & VANADIUM NECESSARY FOR THE PANCREAS & TESTES WAS COMPLETELY STRIPPED FROM THE FLOUR.... & WE GOT SICKER & SICKER AS A NATION.............

A pound of wheat will make a pound of whole-wheat flour. The average loaf is about a pound.

Producing flour other than whole wheat at home would not be easy. And if you plan to use a hand grinder, I hope you have very strong arms.

Yield/acre will depend on the type of wheat, soil, weather and how much you know about growing wheat. You should be able to produce a loaf of bread for every 100 square feet of wheat you grow.

To keep costs down it would be cheaper to buy the flour, you have to think of all the things that owning that much land to grow wheat would cost. Rent on the land, taxes, farm help, machinary, the seed, etc. Then it would cost a lot to harvest and processes as much wheat as you would need to support a bakery. Flour is cheap to begin with. I used to manage, and was the lead baker in a bakery. I was buying 50lb bags of flour for around 38$, which I would imagine being a lot cheaper than growing your own wheat
