I work out of my car 95% of my work week, and I need ideas for lunches that don't require heating or a lot of cooling, like either sitting in the car or with a small cooler and ice pack. Any ideas? Thanks!
If they can be eaten while driving, bonus!

wraps wraps wraps. pop in a bag with a frozen water bottle and you have a cold lunch and a drink. chips, pretzels, granola bars, etc as snacks.

fillings:
- refried beans, grilled chicken, salsa and cheese
- lettuce, onion, tomato, feta cheese, greek dressing
- ham, cheese, mayo, lettuce
- tuna salad, lettuce, tomato
- turkey, cranberry sauce, cheddar cheese
- and on and on and on... :)

put filling in the center of a large tortilla. fold in sides and then roll from one end to the other. wrap in tin foil and twist ends closed like a piece of hard candy. that way there's no mess.

Things like left over fried rice from the night before can be great cold (make sure you use an ice pack if rice contains meat or prawns)

Otherwise, things like bruschetta can be great - chop up the tomatoes, basil and onion, drizzle with olive oil - store in an airtight container. Rub some crusty bread with a clove of cut garlic and wa la - bruschetta to go!

Sandwiches are always a good one - just make sure you dont put tomato on them or they will go soggy!

What about making some tuna or salmon pattys and popping them into a salad box - just take the salad dressing seperatley.

Failing that - a can of beans and a crunchy bread roll always does me!

Grilled paninis! My favorite is a hoagie with provolone, tomato slices, a drizzle of olive oil, salt and pepper.... cook it in a skillet like a grilled cheese sandwich with a little olive oil and then wrap it in a aluminum foil and then throw it on the car seat! You can of course make many variations of this... I use olive oil instead of mayo because mayo can get rancid. Take fresh fruit with you! And always keep bottle water in the car.

You could also make ahead some version of a stromboli or calzone. Pizza dough filled with cheese and tomatoes, of course olive oil. Fold into a pocket and bake. You could make more than one of these at a time and freeze. Nuke them when you want them, wrap 'em and then go.

Do try to pullover and enjoy your meal... we have too many distracted drivers as it is...

Sandwiches "no mayo unless you use a cooler-turns toxic when warm and exposed to air) roast beef coto salami or turkey slices with cheese. A can of pringles and some little debbie snack cakes. maybe a trail mix and jerky.

When I am on road trips I like to get any kind of dried fruit because it is good and doesn't need any specific temperature. That is mainly for snacks though...For a lunch I like to get those lunchable things or those tuna with crackers.

Baked chicken drumsticks individually glad wrapped I cook these for my truck driving husband. When your wrapping them remember that youll be driving when your unwrapping, less is more. They are just protein so they fill you up. Keep them next to your frozen drink and youll be set.

Any kind of sandwiches. Peanut butter & Jelly, turkey, salami, etc. Plus snacks and fruit.
