Can you freeze herbs and preserve them for later?
Are they salvageable once they've turned?

They'll stay fresh longer if, when you get home, you wash them, roll in paper towelling, and put then in a veggie bag. You can also wash them and stand them upright in a jar partially filled with water, kept in the fridge.

You can use them once they begin to wilt, but as seasoning and not as part of a salad or as decoration.

If they start to dry, then leave them to dry completely and then store and use them as dried herbs.

But if they start to show signs of spoilage, then toss them as you would anything else.

STEP 1: Wash herbs in cool water. Remove dead stems and leaves. Snip ends.
STEP 2: Gently pat dry.
STEP 3: Place stems in container filled with water but avoid submerging the leaves.
STEP 4: Cover with a plastic bag or plastic wrap.
STEP 5: Refrigerate. Change water if it becomes murky.

Most fresh herbs will last more than a week when stored this way.
Do not store basil this way. Leave it uncovered and unrefrigerated.

You can dry them and they'll last for the winter. If you want to keep the consistency and potency of the fresh herb, here is what you do. Chop them and then put them into an ice tray. Add water and freeze. The water surrounds the herbs and keeps them from getting "burned". When frozen, remove the cubes and put into ziplock freezer bags. You can add the entire cube into a recipe. Viola! Fresh herbs!

if they are brown or mushy throw them out, if just a little wilted, spritz with water and put in the fridge.

if you wash them, dry them, wrap them loosely in paper towel and put in a ziplock, most will last a week or a little more.

Don't freeze fresh herbs - the ice crystals that form with break them down.

If you have a few favorites that you use sparingly you might look at buying a little pot of herbs to grow in your kitchen. Not expensive, always as fresh as it gets and they look/smell great!

Hi, I am from Bulgaria. We dry herbs for very long periods. I think there is no problem to get bad.

You can refrigerate them for 2-3 days. After that, I like to spread mine out on a paper towel and let them dry (a cool dry place is best). Then, I use them as dried herbs. There is no reason to toss them out!

im so sad now... *sniffle*. Vegetable Soup knows everything... will Herbs go bad... what will we do? we must freeze them to keep em preserved... whos with me.
