It is pollock. Do any imitation crab look or taste like crab? Not really. They are supposed to look like the meat from the legs of the Alaskan king crab. Real crab meat is not red on one side. It is more orange with white specks. The meat is firmer with identifiable strands of crab muscle meat. It is also much much much better tasting. Imitation crab meat is usually sweetened with sugar while real crab meat is a little salty but sweet in flavor and aroma. Imitation crab is a poor imitation.

Pollock - a fish - flavored up like crab and colored.
So it's food, kind of, but not really crab. Put it in enough chili sauce and you'll never miss crab.

Imitation seafood (called surimi) is made from mild-flavored fish such as Alaskan pollock. The fish is skinned, boned and rinsed to tone down its taste, smell and pigment. imatation crab is usually fish treated to take on the taste of crab, this achieved several ways..depends on the brand. Its good used in pasta's, dips etc.
