how come people will age cheese for a couple years without it molding, yet when we take it home it will mold or at least harden after a couple days?

Well, the cheese that we purchase at the store has been pasteurized (hopefully anyway), just like milk. The pasteurization process allows bacteria to be removed from the food before placing it on the shelf (heating followed by rapid cooling). Also, the way it's manufactured adds oils and a lot of unhealthy things to the cheese which aids in making it mold faster when at home (especially when exposed to anytype of spores in the refridgerator). On the other hand, the cheese that's in cellars is pure (hasn't gone through any manufacturing process), that's why the shapes are all different)...the environment that it's kept in is dry and room temp as well, that's why it doesn't mold. Think of velvetta (it can be on the shelf in a store for a long time and will not mold or be hard, however once placed in the refriderator and exposed to spores, the mold process starts and/or the cheese hardens. I'm Certainly No Professional, But I Am Pretty sure That Like Wine Or Aged Meats, It All Depends On The Conditions In Which It Is Kept! You Can Squeez Wine Grapes In A Glass And Leave It On Your Counter For Five Years, But You Won't Have Wine. You Can Keep A Piece Of Meat In Your Refridgerator For Two Months, But You Will Not Have One Of Those Aged Steaks Served A Expensive Steakhouses For $150. Cheese Is The Same Thing, There Is A Certain Process In Which The Cheese Is Kept At A Certain Temperature And At A Certain Humidity Level That The Cheese Doesn't Go Bad!

aging cheese is done in a sterile environment, air can't get at the cheese. That is why they can do it so long.
But when you bring it home and open the cheese you allow mould spores to get on it and grow, and it probably has mold spores from before that didn't grow until air was present.

The mold is a special kind that grows in a certain condition that the other Bad molds can't
