if it is a college application or something similar moral and ethics refers to how you handle a situation, what are the characteristics and behaviors that you do to handle situations, are they honest, are they hurtful? What is "Moral and Ethical" can be in quite of a gray area, what some find to be moral others find immoral. the best to describe your morals and ethics is to write about your value set, what you believe to be right wrong and the most effect positive way to resolve a problem.

they're probably looking for something along the lines of honesty, perseverence, etc.
