Chicken with Spinach and Pasta (quite yummy)! Enjoy...

6 ounces dry pasta shells ( the small shells are best for this)
20 ounces fresh spinach (I prefer to use just 1 bag)
1 pound boneless chicken breast halves, grilled, cut in 1-inch cubes
4 medium cloves garlic, minced
1 to 2 teaspoons olive oil
1 cup chicken broth
1/2 teaspoon ground nutmeg *(optional)
salt and pepper
1/2 cup grated Parmesan cheese
PREPARATION:
Cook the spinach in the broth until tender. Drain and reserve broth. Drain and press to squeeze out as much excess liquid as possible. Cook pasta according to package directions; drain. Preheat a heavy skillet over medium heat; add the oil and sauté the garlic, stirring constantly, until tender but not browned.

Add the spinach and nutmeg, salt, and pepper. Add the grilled chicken chunks to the spinach; stir and add a small amount of the reserved cooking broth. Continue to stir, turning, until hot, adding broth as necessary. Add the hot drained pasta shells into the spinach mixture and blend well. Add theParmesan cheese and mix well.

Serves 4.

How about spinich lasagna? I make that for my husband a lot, you make the regular lasagna but you add spinich to the layers as well. Another thing I make for him he likes is stuffed meat loaf, I stuff the meat loaf with spinich, tastes sooooo good try it!

Spinach Strawberry Salad

45 min 45 min prep
8 servings

1 lb spinach (I pinch off the larger stems)
1 pint strawberries, sliced set a few aside (egg slicer works wonders)
1/2 cup pecans, toasted
DRESSING
1/3 cup raspberry vinegar
1/2 cup sugar or sugar substitute
1 teaspoon dry mustard
3/4 cup vegetable oil
2 teaspoons poppy seeds

Toast pecans over low heat, set aside to cool.
Combine dressing ingredients and shake well.
Toss and garnish with a few sliced strawberries.
Serve immediately.

seasoned bread crubs to cover entire top of spinich add more if u like.

If you are not looking for anything too healthy this one is good, and easy.

Rinse and dry fresh spinach.
Fry up some bacon until it almost reaches the desired crispiness. Remove and chop into pieces. Pour off most of the grease. Return bacon bits to pan.
Add spinach and stir, just until it's hot and coated with bacon drippings.
Serve topped with grated Parmesan cheese.

You might want to try this one I got from Rachel Ray.


4 long, mild to medium chile peppers, such as moderate heat poblano or mild Italian cubanelle
1 tablespoon extra-virgin olive oil, plus some for drizzling
1 clove garlic, cracked
10 ounces triple washed spinach, stems removed and coarsely chopped
Salt and pepper
1/2 cup beef broth or chicken broth
3 cups leftover Spanish style beef and rice
1 cup tomato sauce
2 cups shredded Monterey Jack, smoked cheddar or pepper jack cheese

Preheat a griddle or grill pan. Seed chile peppers. Drizzle peppers with a little oil and grill over medium high to high heat 3 or 4 minutes on each side, until tender. Transfer peppers to a broiler pan or baking sheet, hollow side up.
Place a small skillet on the stove top and add 1 tablespoon, 1 turn of the pan, olive oil and a crushed clove of garlic. Heat over medium flame and add spinach in bunches until it is all wilted and is giving off liquid. Season greens with salt and pepper. Remove spinach and drain. Set aside.

Preheat broiler to high.

Defrost beef and rice in microwave oven. Combine 1/2 cup broth and defrosted rice in the skillet you cooked the spinach in and reheat over medium flame. Add 1 cup tomato sauce and heat through.

Pile spinach and hot beef and tomato rice into peppers, mounding them up in the center of each pepper. Top liberally with grated cheese and melt cheese under broiler 3 to 5 minutes, then serve.

i love to simply sat'e it with garlic and soy sauce and have over jasmine rice with garlic eggs for breakfast. spinich salad with bacon avacado warm honey dressing hard boiled eggs, tomatos cucumber. spinich and chicken pizza

there is continuously french toast once you've eggs and milk. yet, once you've those elements, attempt a Strata. Layers of bread, cheese, (deli meats, sausage, herbs, vegetables something you want extremely) in a casserole dish coated with a blend of eggs and milk then baked off. i'm particular there are a range of recipes on the internet. it really is tremendous for every time of day.

i love the hot or cold spinach dip with crackers.

I also saute it in garlic and olive oil (yummy) and either serve as a side or stuff in the middle of flank steak (also really good)
