You are not in starvation mode. It's impossible to say how many calories you are consuming without knowing what you are eating and in what portions.

Starvation mode is very bad. It's when you consume so few calories that your body hoards every thing you eat and turns each calorie into fat to consume later.

Your question is actually a series of multiple questions! Sheesh!. Listen, from what you've described, I wouldn't say you're going into starvation mode. You're doing a breakfast, lunch and dinner. I'd hardly call that a starvation diet. Calorie wise, you're not what I'd call on starvation fronts either. However, try eating something more substantial for lunch, will ya? An apple and a bag of chips just doesn't cut it. For dinner, try and not gorge on a huge meal because it increases the chances that anything your body doesn't need will be stored as fat. Why don't you do the following: split your meals up more evenly during the day. Eat 4 to 5 smaller meals, or 3 equal meals plus 2 snack meals. Have a decent lunch -- you need to take in some protein at lunch time, this will help stabilize your blood sugar. Go easy on dinner - don't eat until you are "Very full" - in fact, you should never try and eat to you are "very full". Go for contentness.

How big is your protein shake and what's in it? Is it premade in a can, it should say if it is. It could be anywhere from 100 calories to 1000 calories depending on what kind. As for the apple that is 80 calories and the baked lays should say on the bag because you didn't specify what size bag. As far as your evening meal I can't help you there either, no specifics.
Half cup of veggies is 25 calories except for starchy veggies which are 80 calories. Half cup of fruit is 60 calories usually, a bread is 80 calories, fat is 45 calories per tsp, lean meats are 75 calories per oz. Don't go below 1200 calories.

You may not be in starvation mode. But you seem to have fallen into the trap that many overweight people have.
You're eating very little during the day, so your metabolism slows down: it thinks you're starving. You should be eating every three hours to keep your metabolism up. Then you come home and eat a big dinner. You're more likely to overeat if you aren't getting enough during the day.
I'd say you're getting about 440 calories before dinner. You should be taking in the majority of your calories earlier, as dinner is later in the day, and you don't have as much time to burn that off. Your larger meals should be breakfast and lunch... especially breakfast, which boosts your metabolism. Then you want to eat about every three hours to keep your metabolism from slowing down and your hunger at bay, so you won't be ravenous in the evening and chow down quite so much.
Figure out how many calories you need per day: http://www.cancer.org/docroot/PED/content/PED_6_1x_Calorie_Calculator.asp is one site... google it up and you'll find tons of calorie calculators.
After you figure that out, find a diet plan that works for you. I like the Amy's one on the web: http://www.amyskitchen.com/special_diets/diet_plan.php
(it's vegetarian, though, so if you can't live without meat, it may not be for you-- but it gives a good idea of healthy eating on a diet).
Talk to a nutritionist for your best bet. And I personally think you may want a little more protein, but I'm no nutritionist.
Good luck!

I think it really depends on the person. I dont eat breakfast or lunch usually only dinner and I'm not to skinny @ all. I just dont have an appetite so I think as long as you eat when your hungry you'll be fine.
