This is one of the best questions I ever answered or read on this site. Theologians have been arguing this for centuries. I don't think it can be dealt with properly, with scriptural proofs, within the limits of this answer. I am of the mind that Jesus was not perfect but was sinless. What I mean is: He bunked his head, he smacked his finger with a hammer, and he stumbled and maybe some times even tripped. Jesus was 100% human and able to live in an imperfect body without sin. I will not answer if it was possible for him to sin. In all my years of study, teaching and preaching my answer would only be a theological inference (a simple speculation). If I were to dogmatically take a side on that issue it would be me playing fast and lose with the word of God. To argue one way or another would be foolish, for there are good scriptural arguments on both sides.

It seems clear that the teaching of Scripture shows that Jesus was impeccable - Jesus could not have sinned. If He could have sinned, He would still be able to sin today because He retains the same essence He did while living on earth.
He is the God-Man, and will forever remain so, having full deity and full humanity so included in one person as to be indivisible. To believe that Jesus could sin is to believe that God could sin. And that would be a heretical teaching.
As it is written: "For it pleased the Father that in Him all the fullness should dwell." (Colossians 1:19)
And
"For in Him dwells all the fullness of the Godhead bodily." (Colossians 2:9)
We must recall that Jesus was born of a virgin, and therefore Adam's seed was not part of Jesus' DNA. This broke the curse of the Fall, and also because Mary was of the lineage of Nathan and not Solomon, the curse upon king Jehoiachin (Jeremiah 22:30) was broken as well.

Jesus was and is perfect. He was fully man and fully God. It is not possible for God to sin.
When satan tried to test Jesus in the garden of Gethsemane, satan found that he could not tempt God. It is also an example and comfort to Christians to know that Jesus went through satan's temptations and emerged victorious. We can claim that same victory.

Hebrews 4:15 For we have as high priest, not one who cannot sympathize with our weaknesses, but one who has been tested in all respects like ourselves, but WITHOUT SIN.
1Peter 2:22 He committed NO sin, nor was deception found in his mouth.
2Corinthians 5:21 The one who did NOT know sin, he made to be sin for us, ..
1John 3:5 You know too that that one was made manifest to take away our sins, and there is NO sin in him.

According to the dictionary, your description of Jesus is correct.
Jesus however IS impeccable, not "was."

He can't sin. He's the Son Of God so it makes him also God. There's no way he can sin.
