Creamy Feta-Spinach Dip:

1 (8-ounce) carton plain low-fat yogurt
3/4 cup (3 ounces) crumbled feta cheese
1/4 cup (2 ounces) 1/3-less-fat cream cheese, softened
1/4 cup low-fat sour cream
1 garlic clove, crushed
1 1/2 cups finely chopped spinach
1 tablespoon minced fresh or 1 teaspoon dried dill
1/8 teaspoon black pepper
Fresh Dill (optional)

Spoon yogurt onto several layers of heavy-duty paper towels; spread to 1/2-inch thickness. Cover with additional paper towels, and let stand 5 minutes. Scrape into the bowl of a food processor using a rubber spatula. Add the cheeses, sour cream, and garlic, and process until smooth, scraping sides of bowl once. Spoon yogurt mixture into a medium bowl, and stir in the spinach, minced dill, and pepper. Cover and chill. Garnish with fresh dill, if desired.

Yield: 2 cups (serving size: 1/4 cup)

Artichoke and Spinach Dip Recipe courtesy Emeril Lagasse, 2005

1/4 cup plus 2 tablespoons vegetable oil
1/4 cup all-purpose flour
2 cups milk
Salt
Cayenne pepper
1/2 cup grated Parmesan (about 2 ounces)
1/2 cup grated Monterey Jack (about 2 ounces)
1 cup chopped onions
1 (10-ounce) bag fresh spinach, stemmed, rinsed and chopped
2 tablespoons chopped garlic
2 (15-ounce) cans artichoke hearts, drained and julienned
10 to 15 small corn tortillas, cut into fourths
Vegetable oil, for frying

Preheat the oven to 400 degrees F. Preheat the oil in a deep fryer.
Combine 1/4 cup of the vegetable oil and flour in a saucepan over medium heat. Stir the mixture constantly 5 to 6 minutes for a blond roux. Whisk in the milk and bring the liquid up to a boil. Season the liquid with salt and cayenne. Simmer the liquid for 5 to 6 minutes, or until the liquid is thick and coats the back of a spoon. Remove the sauce from the heat and stir in the cheeses. Set the sauce aside.

In a saute pan, heat the remaining 2 tablespoons vegetable oil. When the oil is hot, add the onions and saute for 2 minutes. Stir in handfuls of spinach at a time, until all the spinach is incorporated. Add the garlic and artichoke and saute for 2 minutes. Season the vegetables with salt and cayenne. Remove the vegetables from the heat and turn into a mixing bowl. Fold the cheese sauce into the vegetables. Turn the mixture into a baking pan. Bake the dip for 10 to 15 minutes, or until the top is golden brown.

Fry the tortilla chips, batches at a time, for about 2 to 3 minutes or until the chips are golden and crispy. Remove from the oil and drain on a paper-lined plate. Season with salt and pepper. Serve the chips with the dip.

Mexican Spinach Dip:

2 cups of chunky Pace Salsa
2 cups of shredded Monterrey Jack Cheese
8 oz. Cream Cheese
1 pkg. frozen chopped spinach (thawed and drained)

Put all ingredients in a microwave-safe dish and put in microwave for 5 minutes. Stir and serve with chips or crackers. Yummy!

INGREDIENTS
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup sour cream
1 cup mayonnaise
3/4 cup chopped green onions
2 teaspoons dried parsley
1 teaspoon lemon juice
1/2 teaspoon seasoning salt
1 (1 pound) loaf round, crusty Italian bread
DIRECTIONS
In a large mixing bowl, combine spinach, sour cream, mayonnaise, green onions, parsley, lemon juice, and salt. Mix until well blended, then refrigerate.
Cut a circle out of the top of the bread and scoop out the inside. Tear the inside into pieces for dipping. Spoon the dip into the center of the bread bowl and serve accompanied by the pieces of bread for dipping.

The best, easiest spinach dip in the world!




Here is what you need:


A microwave
A big microwave-safe bowl
A spoon



1 block (8 oz.) of cream cheese
8 oz. (2 cups) bag of shredded cheddar cheese or cheddar/mozzerella cheese mix
1 frozen box of chopped spinach
1 medium tomato
1 small onion (white, yellow or red)


Tortilla chips, crusty bread, or both to dip with.



Let the spinach thaw out and chop up the tomato and onion.


Put all the food ingredients in the big bowl except the chips, stir to mix. Heat in microwave on medium to medium-high heat until cheese is all melted, about 6-8 minutes. Stir about halfway through cooking. After all heated and cheese is all melted, stir to mix everything together and dip!

Spinach Dip

1 (8 ounce) container sour cream
1 cup mayonnaise
1 (.4 ounce) packet dry vegetable soup mix
In a medium mixing bowl combine spinach, sour cream, mayonnaise and vegetable soup mix. Mix well. Refrigerate it for 4 hours. Stir before serving.

the best recipe that i have ever used was on the back of the walmart brand chopped spinach!! it was so delicious :) sorry i cant give it to you...i didnt write it down :) but seriously it is so easy and so good...my husband ate a ton of it and he doesnt normally like spinach dip!!
