I have all the ingredients I need to make oatmeal raisin cookies, but I forgot to buy brown sugar - I only have regular white sugar. I've been looking online to see if there are any alternative recipes that don't require brown sugar, but can't find any...
Any suggestions?

I know everyone has explained the whole molasses thing but I imagine you probably don't happen to have any on hand. If you don't mind the taste of maple syrup (I HATE it) you can try adding a bit of that to the sugar. But I would just make them with the while sugar. You'll be ok.

I searched different websites. Couldnt find a cookie recipe that doesnt use brown sugar. Brown sugar gives the cookie the crispness and browness of the cookie.

This may help:
to substitute a cup of white sugar you can use 1 cup granulated (white) sugar plus 2 tablespoons molasses or dark corn syrup

The only difference between brown sugar & white sugar is essentially the inclusion of molasses. There is a 1-to-1 ratio to exchange them.

They won't taste quite the same, but no one will really notice if you just substitute one for the other directly in your recipe.

go ahead and make them with white sugar, but add about 2 TBSP maple syrup per cup of sugar to keep the moisture level right- this should be a good substitution for brown sugar in a pinch- but they wont be AS good as usual-- at least they wont suck

the biggest difference white sugar will give your cookies is a lack of moisture and cheweyness- you could do white sugar and coconut to replace some of that moisture

You can totally use white sugar. If you have molassas or honey, try that with the white sugar, BUT if you don't have it, don't stress. It'll be fine, just a little sweeter than usual, so you may want to cut the the extra sugar a bit. Good luck, they'll still be yummy. :)

I have they are okay, I always forget to get one of my ingredients, it is always neat to see the end results, sometimes u actually find some really good winners...good luck
