Tartar Sauce
5 min 5 min prep
1 1/2 cups
1 1/4 cups mayonnaise or Miracle Whip
1 medium dill pickles (or 1/4 cup dill relish)
2 sprigs parsley
1 tablespoon fresh lemon juice
1 teaspoon dried onion flakes (or fresh)
1/4 teaspoon worcestershire sauce
Mix all together in the food processor and pulse for about 10 seconds until finely chopped, but not smooth.
Best if refrigerated for an hour before use.
Note: Can be made without the food processor, using dill relish or finely minced pickle.
Lasts quite a while in the refrigerator.

Homemade Tartar Sauce
Lots of chopping and mincing but, like everything else, the extra effort called for in anything homemade produces a far finer result.
1-1/2 cups mayonnaise
2 tablespoon minced white onion
1 tablespoon minced kosher dill pickle
2 tablespoons minced sweet pickle
1 tablespoon minced celery
2 teaspoons minced pimiento
dash of Tabasco sauce
1 t White vinegar
1/2 teaspoon dry mustard
2 teaspoons fresh lemon juice
1 teaspoons Dijon mustard
Combine all ingredients and mix well. Chill for several hours before serving. Makes about 1-3/4 cups.

1/4 cup mayo
1 squeeze of mustard
1/2 squeeze of ketchup
mix it together so it looks like "jack's secret sauce"
Add 3 T spoons of hot dog relish
stir it in
add salt
add pepper
the SECRET INGREDIENT IS PAPRIKA!! give a couple shakes.
Add a squeeze of 1/2 a lemon and stir again.
Taste it.
If it's too yellow or pink add more mayo
Varriations:
You can add dill spice or dill pickle juice if you don't have relish on hand.
Or
You can add terragon for a real gourment flavor.
I make it up in smaller batches, and make about 3 kinds.
2nd Recipe is:
1 part 1000 Island dressing
3 parts mayo
1/2 squeezed lemon
3rd Lazyman's Nothing in the Fridge Tartor Sauce
1. 4 parts Mayo
2. 2 Tablespoons of Mustard
3. Salt and Pepper
*** optional add lemon juice
options--- can add terragon spice to your own liking

The easiest way is to take about a cup of mayonnaise, add a few tablespoons of sweet relish (to taste, you might like more or less) a little grated onion and some lemon juice. Just mix all together and taste to see if you want to add any extra of the above to suit your taste. Remainder can be stored in a container in refrigerator for a long time. (A small jar is best, it seals well and you remember what's in it!

When you drop the fish into the fryer, do it very slowly so that the batter starts to cook before you lower the entire piece in. If you are worried about the hot oil just use a pot holder glove. As far as the batter goes, I always use beer batter. Flour, salt, pepper and enough beer to make a mixture that will coat the fish in an 1/8 inch layer.
