Feta, a classic Greek cheese traditionally made from sheep's or goat's milk, is now available in a milder, less bitter version made from cow's milk. But whether you choose a creamy Bulgarian feta or a firmer Greek of American one, the zesty cheese is more than a wonderful addition to vegetable and fruit salads. You can use it in just about any recipe that calls for cheese. Add it to cooked rice or tomato-based pastas; use it as a topping for baked potatoes or as a filling for omelets; crumble it over tomato sandwiches; or simply serve it as a table cheese along with olives, bread, grilled vegetables, and salami.
Feta that is sold crumbled should be stored in an airtight container and used within a few days. When it's sold in chunks in vacuum-sealed plastic packages, it should be stores wrapped in plastic or in airtight containers and used within 1 to 2 weeks. Feta that comes immersed in a brine solution of water and salt should be stored in its brine and used within 1 to 2 weeks after opening.

Oh my gosh! I'd be lost without feta cheese!!!! Here are some of the things I do with it:
Spinach salad: mandarin oranges, feta cheese, candied walnuts, french dressing
Pasta salad: rotini pasta, black olives, cubed salami, feta cheese, red bell pepper, green onion, Italian dressing
Shrimp and Feta: baked in the oven, 1 lb large uncooked shrimp, shelled, chopped fresh tomatoes, basil, feta
There are tons of things to do with feta...just use your imagination!

Best advice-keep it simple, a nice bed of crisp lettuce,dice the feta cheese with cut cherry tomatoes, and a few croutons-toss in a little good olive oil and serve-delicious.

Baby spinach, cherry tomatoes, pine nuts and feta makes a lovely quick salad.
Olives and feta eaten on cocktails sticks is quick and yummy.

Mmm...Feta!
I like mine in a pocket bread:
Vegetarian with falafel balls or with gyro spiced ground chicken.
Diced cucumbers in plain yogurt.
Lettuce, tomato, and maybe some Bean sprouts.
Hot sauce.
Do not forget the hummus (Mediterranean bean sauce/dip. I like mine with sesame tahini but some people find tahini too bitter).
I know what I am having for dinner tonight!

Top a Greek salad with it, add some to mashed potatoes, sprinkle some in between two slices of bread along with some other type of cheese and make a grilled cheese, add to scrambled eggs, top baked chicken, add to pasta salad....lots of things you could do.

lots of good suggestions there - I usually put it in greek salad like I had when on honeymoon.
I've seen Nigella dice it & mix it with watermelon chunks for a refreshing summer salad to go with bbq food, although I've not tried it - it looks colourful!
