Just chop up the pickles and add chopped pimentos or red roasted bell pepper if you have any & you've got something close to relish.

(A few mustard seeds are a nice touch if you have any on hand.)

Just dice up some dill pickles, red bell peppers, onions and celery. Add to a bowl or jar and pour some pickle juice over it. Throw in some salt, black pepper and sugar to taste.

You can also add a couple of tablespoons of celery seed or mustard seed for more flavor.

I would let it sit in the fridge a couple of hours before serving.
