An asopao is a thick soup usually with rice in it which people enjoy in Puerto Rico. Actually I like it better in a colder climate.
How do you make it? (BTW, Tomas is my son, and I am staying with him up north.)
I started with a large deep pan with olive oil, green peppers, salt, Oregano, fresh pepper, some chunky chicken soup, rice and started that simmering.
Little by little I added kidney beans (habichuelas), ham, inexpensive steak cut in small pieces, Chinese mustard, soy sauce, a can of beets (I put in the juice of all the canned products used); continue stirring varying the heat from medium while stirring to warm while you prepare ingredients.
After some time I took out each beet since it tasted a little too sweet and they got bloated. I used 2 or 3 kinds of barbecue sauce but you can use what you like. I used Adobo (mixed spices) to make it taste more Puerto Rican.
Let it cook on warm for hours to tenderize the steak but you could use high quality meat.

I neglected to say that this is like a stew which you can cook for hours and vary the ingredients according to your taste.
It is the custom in Puerto Rico to invite many people over, and they come when they feel like it. For this reason, Puerto Ricans prepare big pots of rice, beans, and the men barbecue while the women fix salads, deserts, appetizers, and people tend to drink whatever they want when they feel like it.
I have wonderful memories of great parites and family activities there always with plenty of food and drinks.

Great responses. It makes a lonely guy feel so good. I should just add that I did add pimientos morrones which are red peppers which come in a jar. (Goya is one brand which sells them.)
