Many people don't. There are websites galore out there to help you work on this, but the most common instruction I have found is this:
1. Before you go to sleep, as you're laying down in bed, focus a minute on yourself (almost like preparing to meditate), and send yourself a silent reminder that you want to remember any dreams you have upon waking.
2. Leave a book and pen/pencil beside your bed, so that upon waking, you can immediately write down any memories, feelings, etc. (and even if you just remember a feeling, write it down)
3. Don't try too hard or get frustrated if it doesn't come easily at first. This will take practice, and you might notice that you remember better at certain times than others (like, you might have more trouble if you're going to bed stressed).
If you want to find out more, try Google-ing "remembering dreams" or "dream recall". And remember not to take the dream interpretation sites too literally - after all, they're YOUR dreams, a ladybug might not mean to you what it means to me.

Here is an exercise to help you remember your dreams. I have tried it and it has worked very well!!
At bedtime, imagine a goldern cup to be filled with your dreams, which sits by your bedside. When you wake up in the morning, imagine you are drinking from the cup. Then, jot down your dreams in a journal, or record them for later documentation. You will see that as you put effort into this exercise, your dream experiences will really start to flow! Good luck!

The reason you can't usually remember your dreams is that your long-term memory systems are shut down while you're dreaming. That's why, if you're woken while you're dreaming, you can only remember the last 15 minutes or so of your dream.

You can't remember your dreams because you wake up after your dream has fully ended already. If you wake up right in the middle of your dream and leave it unfinished, you will remember it.

Most people don't.
Try keeping a journal next to your bed. When you wake up from the dream, write it down. This will help build your memory of dreams.

Because you're not eating half an onion before you go to bed. Do that and you'll remember vividly the escaped convict chasing you down the street with an axe in one hand and a cucumber in the other.
