Cows milk is made up of two proteins, curds and whey. There is predominantly curds in cows milk and in second stage baby milk. First stage baby milk is predominantly whey, in the same proportions as breast milk. This is the major difference. The first stage baby milk is more closely patterned on beast milk and the second stage baby milk is more closely patterned on cows milk.
