broown the meat both sides, cover with water or stock and cook on lowish heat for hours, it makes the meat very tender it just breaks instead of having to cut it. very nice

Always braise on low temperatures. The low temperature & slower cooking time helps to break down the tissues in the meat & makes tougher (cheaper) cuts of meat nice & tender.
