1/4 cup raw pistachio kernels
1/4 cup sugar
1 tsp lemon juice
2 tsp cornstarch
1 pint pistachio ice cream
1 cup strawberries
12 macaroon cookies
3 cups whipped cream
whole strawberries for the top
Crush macaroon cookies; add pistachios and coarsely chop in a blender or processor.
Spread mixture in ungreased 10 inch pie plate. With fingertips, press to cover the bottom of the plate evenly with the mixture. Set aside.
Place cleaned and crushed berries, sugar, lemon juice and cornstarch in a medium saucepan. Cook over low heat, stirring until the mixture thickens. Let cool.
Spread berry mixture in pie plate. Cover and freeze for 30 minutes. When frozen, spread slightly softened ice cream evenly over the top and refreeze. Top with whipped cream. Decorate with whole berries.

Pistachio Pie
15 min 15 min prep
envelopes Dream Whip
2 3/4 cups milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 packages instant pistachio pudding mix
1 graham cracker pie crust
Combine with a mixer Dream Whip and 1 cup milk.
Add vanilla and almond extracts and mix.
Add pudding mix and remaining milk and beat until thickened and fluffy.
Pour into pie shell and refrigerate

Pistachio Cream Pie

(8 ounce) package cream cheese, softened
1 cup milk
1 (3 1/2 ounce) package instant pistachio pudding mix
1 (8 ounce) can crushed pineapple, drained
1 (9 inch) prepared graham cracker crusts
2 cups whipped topping
toasted coconut
In a small mixing bowl, beat the cream cheese, milk, and pudding mix until smooth. Fold in the pineapple. Spoon mixture onto the crust.
Spread with top with the whipped topping; sprinkle with toasted coconut. Cover and refrigerate pie until time to serve.
*You could sub sugar free whipped topping to make this a little more diabetic friendly. And I know the stores carry some sugar free pudding mixes, but im not sure if pistachio is one of them*.

- 1 Prepared graham cracker crust
- 1 package Pistachio instant pudding mix
- 2 cups Cold milk
- 8 ounces Cool whip topping or whipping cream
In a small mixing bowl, combine 1 package of instant pistachio pudding mix and 2 cups of cold milk. Whisk for two minutes until the pudding is starting to set. Pour this mixture into a prepared graham cracker crust.
Top with Cool Whip or whipped cream. Garnish with grated chocolate, chocolate curls, cherries or whatever you desire.
Chill for at least two hours before serving.

Easy!
1 graham crust
1 pkg. pistachio pudding mix
1 can (about 15 oz.) crushed pineapple slightly drained
1 tub of Cool Whip
Mix the pudding mix and pineapple in a bowl and let stand for 10 minutes. Fold in the Cool Whip, dump into the crust, and refrigerate for at least 4 hours.
Easy and delicious!

Pistachio Pie
2 kiwis, peeled and sliced
1 6oz. chocolate pie crust
1 3/4 cups cold milk
1 package pistachio instant pudding mix
cool whip, thawed, for garnish
Arrange kiwi slices, reserving a few for garnish, to cover bottom of crust.
Combine milk and pudding mix in large bowl.
Beat with electric mixer at low speed 1 minute or until well blended. Pour over
kiwi and chill pie 2 to 3 hours. Place reserved kiwi slices on top of pie and
garnish with dollops of whipped topping.
Frozen Pistachio Pie
Pistachio pudding and ice cream are combined in a chocolate crumb
crust. Drizzle warm fudge ice cream topping over each slice just
before serving.
Crust Ingredients:
1 1/2 cups crushed chocolate graham crackers
1/4 cup granulated sugar
1/4 cup Butter, melted
Filling Ingredients:
1/3 cup chopped salted pistachios, reserve 2 tablespoons
1 quart (4 cups) vanilla ice cream, slightly softened
1 (3.4-ounce package instant pistachio-flavored pudding and pie
filling
1 drop green food color, if desired
Topping Ingredients:
1/2 cup chocolate fudge topping, warmed
Heat oven to 375°F. Stir together all crust ingredients in medium
bowl. Press on bottom and up sides of 9-inch pie pan. Bake for 8 to
10 minutes. Cool 15 minutes.
Meanwhile, stir together pistachios, ice cream, pudding and food
color in large bowl. Spoon mixture into cooled crust. Cover; freeze
until firm (8 hours or overnight).
Just before serving, drizzle 1 tablespoon chocolate fudge topping
over each serving; sprinkle with reserved pistachios.
