does anybody have some good recipe ideas for pancakes?

Blueberry Pancakes




Ingredients

plain wholemeal flour
soya milk
vegan margarine
blueberries
soya cream

For the pancake mix, I never measure my ingredients but judge by the consistancy of the mixture. If I want thin crisp pancakes I make a runnier mixture and for thicker stogier pancakes I use more flour. I usually make less mix than I need in case we don't eat as many as I anticipated, but if you have some left over it will keep in the fridge for as long as the milk will stay fresh.

Start by melting a knob of margarine in a frying pan. Mix soya milk and the flour together in a jug with a fork until you have the desired consistancy. If it is lumpy you can use a hand mixer to smooth it out.

Pour some mixture into the pan. For thin pancakes barely cover the bottom of the pan, but for thicker ones pour in a more generous amount. Cook on a medium heat as you don't want them to burn. Use a spatula to gently turn the bottom of the pancake to check how it is cooking. If it is going brown but there is still a lot of liquid mixture on the top turn the heat down a bit. Once the pancake is solid enough flip over gently using the spatula and cook the other side. I have never been able to toss these as they don't have the same consitancy as regular pancakes.

Once the other side is cooked as well turn out of the pan and fill one side with soya cream and blueberries. Flip the other side over and then enjoy.

Apple Puff Up Pancake
Serves 4.

Ingredients
1 large Granny Smith apple
3 large eggs, room temperature
1/2 cup whole milk
1/2 cup all-purpose flour
1/4 teaspoon vanilla extract
2 tablespoons butter
1/4 cup dark brown sugar
1/4 teaspoon cinnamon
Lemon juice
Confectioners' sugar

Instructions
1. Preheat oven to 450F and place rack in center of oven. Peel, core and slice
apple. In a medium bowl, whisk together eggs, milk, flour and vanilla until
smooth.
2. Melt butter in a 10-inch cast iron or other ovenproof skillet over medium
heat. Spread apples in pan and cook for 4 minutes. Turn apples and continue
cooking 3 minutes. Sprinkle brown sugar and cinnamon over apples and cook
another minute or until sugar begins to melt. Remove pan from heat, stir apples
lightly to coat with sugar, and then top with batter.
2. Bake 15 minutes or until mixture puffs up and turns golden brown around
edges. Remove from oven and cut into four wedges. Sprinkle with lemon juice and
serve with a sprinkling of confectioners' sugar.

Pancake with lemon
4 oz. plain flour
1 egg
pinch salt
0.5 pint milk
caster sugar
lemons

Sift the flour and salt into a bowl. Make a well in the middle and add the egg. Add half the milk, a little at a time, mixing with a wooden spoon, from the centre outwards, and gradually draw in the flour. Mix until smooth, and stir in the remainder of the milk.

Heat a little butter in an omelette or pancake pan. Pour in just enough mixture to cover the bottom of the pan. Cook until it is beginning to brown on the bottom (bubbles are appearing on the top). Loosen it by shaking the pan a little, then flip it or turn with a egg flipper. Cook briefly on the other side.
Place on a plate and dredge with caster sugar and lemon juice.
They can be kept warm, covered with a towel, in a warm oven.


Pumpkin Pancakes
1 egg
1 cup milk
1/2 cup cooked or canned pumpkin
3/4 cup unbleached enriched white flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger
2 tablespoons vegetable oil

In a bowl combine all of the ingredients and stir just until blended.
Pour the batter onto a hot griddle that has been lightly oiled. Flip the
pancakes over when bubbles break around the edges. Serve hot with
rum flavored fruit sauce. Makes twenty-four 4-inch pancakes.

well i always use this recipe. cup of plain flour, 1 egg, and half a cup of icing sugar. if its too thick then add a bit of milk and then chocolate chips to top it off. pour into pan until cooked then i usually dust with icing sugar and pour melted chocolate on one side of it then roll pancake up. or just plain. or forget the choco chips in it and chop up a banana and spread slices out on the pancake then pour melted chocolate over that! delicious!! mix up your batter and allow it to stand for at least two hours before using. This will improve the look and flavour of your pancakes. I serve mine as they are cooked, none of this piling them up with a shake of sugar. Just out of the frying pan - onto the plate and spread some strawberry jam over it, roll it up and scoff away... To my standard pancake recipe, I like to add pumpkin and some pumpkin pie spice. Yummy!

I love pancakes rolled up with sliced banana and honey then topped with lemon juice, some good plain yoghurt and drizzled with honey.

Just buy some ready made batter mix, do as the instructions tell you (very easy) & add whatever you want. I recommend a block of white ice-cream with maple syrup drizzled over the top as the filling - very, very tasty !!!!!!!!
