1) List the 7 gifts of the holy spirit and give a definition of each.
These gifts, enumerated (approximately) in Isa 11:2-3[1], are:

Wisdom
Understanding
Counsel
Fortitude
Knowledge
Piety
Fear of the Lord

2) Which gift do you feel you use most frequently?
Counsel - Duh!! I'm here on Yahoo Answers. :-P

3) Give an example of how each of the gifts is used.
This one is tougher ...

Wisdom - knowing when to and not to answer a question
Understanding - gaining the insight needed to communicate the corect message
Counsel - providing guidance to folks
Fortitude - sticking with what you believe, in the face of adversity
Knowledge - having learned what the truth is
Piety - understanding that it is all for God, and not for you
Fear of the Lord - Realizing that God is in charge of everything even if you don't recognize how that could be.

1. "1831 The seven gifts of the Holy Spirit are wisdom, understanding, counsel, fortitude, knowledge, piety, and fear of the Lord. They belong in their fullness to Christ, Son of David. They complete and perfect the virtues of those who receive them. They make the faithful docile in readily obeying divine inspirations.

Let your good spirit lead me on a level path.
For all who are led by the Spirit of God are sons of God . . . If children, then heirs, heirs of God and fellow heirs with Christ." (a)

2) I think I use Piety most ... dont' feel wise, or knowledgeable, I do teach kindergarnders ... but right here and now ... I think that my thankfulness for all that comes from God is where I am.

3) A few others did a good job on how gifts are used, so ditto.

The seven gifts of the Holy Spirit are:
+ Wisdom
+ Understanding
+ Counsel
+ Fortitude
+ Knowledge
+ Piety
+ Fear of the Lord.
(Isaiah 11:1-2)

By answering so many questions, I probably use the gift of knowledge most frequently.

With love in Christ.

If you are referring to the fruitage of the holy spirit: Love, joy, peace, goodness, kindness, mildness, faith, and self-control. (I count 8) (Did I miss any? those are off the top of my head.)
What does the fruitage of the holy spirit have to do with the Catholic Church in particular? Not much that I can see. I'd say I use self-control the most - as in controlling my temper.
