Absolutely, they have a shelf life--they are not magical, it's just unleavened bread. Like any food product they will "go bad" if not used in a timely manner, or if left open.
Don't just take my word for it. Visit one of the websites that sell communion wafer/crackers. www.christianbkstr.com (they advertise theirs as having a 1 year shelf life.

Possibly as crackers, but not at the body of Christ.
If they DO have an expiration date (as crackers ~ of course), I wonder what the proper way to dispose of them is? (hum!) I think I'll pose that question.

They're called "wafers", and no, they don't. When I was a Catholic, I remember those things were like cardboard and they were so dry that they'd get stuck flat to the roof of your mouth and it was a real trick to deal with that without choking. If you stuck your finger in there to pry it off the roof of your mouth, a nun (now that's omnipresence) would slap your hand and drag you out of the church. They're like stale rice crackers, only a lot thinner.

Good question. I am going to check if they have. I have taken some which are not so fresh. Parishes are supposed to practice a first in first out policy on this.
