Wow, good for you for having some innovation. What you could do is make a "salad bar" out of the leftovers in the fridge. Add some canned fruit, maybe some salad fixings and let the kids make their own plate. They will usually eat what they take, and will be less likely to whine for sugary snacks later. Clean up really well and as a parent, I'd be impressed.

Kids always like cheese and noodles. Put together with help of a jar of spag. sauce. Cook different shape noodles, like cork screw, round noodles, even different color noodles, then drain them, put them in a oven proof dish, pour spag. sauce, and mix, cover with foil and bake 20 to 30 min. on 350F. Open foil and layer mozzarella cheese on top, you can also add parmesan or both, put back in oven till cheese melts, maybe 10 mins, dinner served. Try adding bread and butter and maybe a salad, I sure their parents would like that!

Baked Ziti Casserole
This casserole is perfect for a simple family meal, but also hearty enough to serve guests. This is fast comfort food that is sure to please everyone at your table.

Tip: Just add a tossed salad for a complete meal in a snap. Also, leftovers will freeze well.

Serves: 6
Preparation Time: 20 minutes
Baking Time: 25 minutes RECIPE INGREDIENTS:
1/2 pound dried ziti
15 or 16 ounces ricotta cheese (part skim)
3 cups (or 12 ounces) shredded mozzarella cheese
3 cups (or a 26-ounce jar) spaghetti sauce
1/2 cup Parmesan cheese
1. Heat the oven to 350 degrees. Bring a large pot of salted water to boil and add the ziti. Cook until tender, about 8 minutes, drain the pasta.

2. Place the ziti in a large bowl. Mix with the ricotta and half of the mozzarella. Grease a 9 x 13-inch casserole dish. Spread half of the spaghetti sauce on the bottom of the pan. Add the ziti mixture and cover with the remaining sauce. Sprinkle with Parmesan and the remaining mozzarella.

3. Bake uncovered, for 20 to 30 minutes, until the casserole bubbles on the edges.

Burrito Casserole

this version is mild to accommodate children's tastes. For the adults, try adding cilantro, jalapeño pepper, and a spicy salsa to half of the casserole.

Servings: 6 to 8
Preparation Time: 23 minutes
Baking Time: 15 minutes RECIPE INGREDIENTS:
8 small (fajita-size) flour tortillas
2 cups refried beans
2 tablespoons canola oil
1/2 small red onion, diced
1 1/2 pounds ground beef
1 1/2 cups store bought salsa (medium for a spicier taste)
Optional: 1 minced fresh jalapeno pepper
1 1/2 cups cheddar cheese
1. Preheat the oven to 350 degrees. Cut 5 of the flour tortillas into strips, about 1/2 inches in width and set aside. Line the bottom of a 9 by 13 casserole dish with the remaining flour tortillas. Spread an even layer of refried beans over the tortillas.

2. In a large skillet heat the canola oil over medium high heat. Add the onion and beef to the pan and sauté for about 5 minutes; breaking up the meat with a spoon, until it is no longer pink. Pour off and discard any excess liquid, stir in the salsa.

3. Spread meat mixture over the refried beans, sprinkle on optional jalapeno peppers. Top with tortilla strips and sprinkle on cheddar cheese. Bake in preheated 350 degree oven until cheese has melted, about 10 minutes. Serve with sour cream, chopped tomatoes, and chopped avocado on the side.

Quick Turkey Chili
Using ground turkey instead of the traditional beef allows for much less cooking time, so instead of hours on the stove you are ready to go in under 30 minutes.

Tip: This version is a bit mild. If you want a little more kick, just add some extra chili powder.

Serves: 4
Preparation Time: 10 minutes
Cooking Time: 20 minutes RECIPE INGREDIENTS:
2 tablespoons vegetable oil
1 onion, chopped (about 1 cup)
2 cloves garlic, minced
1 1/4 pounds ground turkey
2 tablespoons chili powder
1/2 teaspoon ground black pepper
1/2 teaspoon ground cumin
1 (15 ounce) can black beans, drained
1 (15 ounce) can pinto beans, drained
1 (14 ounce) can diced tomatoes
1 to 2 cups chicken broth
1 cup frozen corn kernels, thawed
Salt to taste

Optional Toppings
1 cup sour cream
1 cup shredded cheddar cheese
1. Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the onion and garlic and sauté, stirring occasionally for about 3 minutes until onion softens. Increase heat to medium-high, add ground turkey and stir, breaking up large pieces with the back of a wooden spoon. Add the chili power, black pepper, and cumin; stir and continue to break up the meat to incorporate the spices. Allow mixture to cook for 5 more minutes, stirring occasionally.

2. Add the black beans, pinto beans, tomatoes, 1 cup of chicken broth, and corn. Taste and add salt if needed. Continue to cook for 5 to 10 more minutes, stirring occasionally. Add more broth if the chili is too thick. To serve, ladle chili into bowls. If desired, top with a dollop of sour cream and a sprinkle of cheddar cheese.
