I usually don't get to go to the gym until 8pm, so by the time I've showered up and come home, it is around 10pm. I'm usually hungry by this time, and I am usually up until 2am. I don't think it would be most beneficial to not eat at all, because then my body would think it is starving and store calories. I am trying to trim some fat off and lose about 5 lbs, so I am really self conscious of my choices. I usually eat breakfast, maybe some fruit for lunch and have a light dinner by the time I go to the gym. What are some options for me when I return home?

your body is in a catabolic state after exercise. if you don't eat your body will continue to scavenge amino acids from muscle proteins.

if you are up an additional 3 hours after training, eat a normal balanced meal or at the bare minimum have some sort of protein shake with fruit

In about 70-80% of people the metabolism,during night time is slower. you may wanna have no more than 150 Cal.(or no more than 10 % of your daily calorie) after 8PM. good luck.

the best thing would be tuna fish, no mayo. It would provide your body the protein it needed without adding very many calories.
