I can't have sugar at the moment and I am looking for a recipe for cooked apples.

Diabetic Baked Apples

Ingredients:
8 apples, cored
2 TBS cinnamon
1 can diet cream soda or diet root beer soda

Arrange apples in baking dish, pour soda over apples and sprinkle with cinnamon. Bake at F 350 for 30 minutes. Serve warm, cold or partially frozen (the best)

Buy the biggest Rome apples you can find. Wash the skin and core the apples. Place in a microwave dish and pour some diet soda (or apple juice but that has sugar) down inside the hole. Pour some liquid over the top too. Sprinkle the tops with cinnamon. (You can add raisins if desired.) Microwave about 8 minutes depending on how many apples you use. The apples are done when they are soft and almost mushy.

Red - Hot Apples
4-6 servings 30 min 10 min prep
Change to: servings US Metric
4 tart apples, such as granny smith
2 cups water
1 1/4 cups red-hot candies
1 lemon, juice and zest of
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
Peel, core, and quarter apples.
Combine with the remaining ingredients in a saucepan, and bring to a boil.
Reduce heat and simmer for 15-20 minutes, until the liquid is thickened and the apples are tender.
Cool the apples in the syrup for at least 30 minutes.
Serve at room temperature or chilled

Personally, I like grilled apples - just take a few apples, slice them into wedges, heat some butter in your grill pan or skillet, add some Splenda (artificial sweetener made from sugar), some cinnamon, nutmeg, and a pinch of cloves, and saute until tender, adding more margarine and other ingredients as needed. You can eat these over sugar free vanilla ice cream, and they're REALLY good.

Bake the apple as you normally would, but use honey or splenda instead of the brown sugar.
