Well I have a can of Libby's Pumpkin Pie and I want to make cookies witih them. Does anybody have a shortening free recipe for pumpkin pie cookies?

Pumpkin Pie Cookies

Ingredients:
1 cup pumpkin, fresh is best
1 cup honey
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 cup butter, room temperature, not melted
1 egg
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup whole-wheat flour

Preheat oven to 350°.
Combine all ingredients in a bowl.
Grease a cookie sheet pan.
Drop cookie mix 1 tablespoon at a time on the cookie pan.
Bake for 10-15 minutes or until done.

I found this recipe below; I'm pretty sure you can substitute the 1 can of pumpkin for 1 cup of the Libby's Pumpkin.

30 min 20 min prep 30 cookies

2 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. pumpkin pie spice
1/2 c. soft butter
1/2 c. shortening
1 c. sugar
1 c. canned pumpkin
1 egg
1 tsp. vanilla

Mix together flour, salt, baking powder, baking soda and spices. Set aside. Cream butter and shortening in mixing bowl. Gradually add sugar; beat until fluffy. Add pumpkin and egg; beat well. Add dry ingredients and blend. Stir in vanilla. Drop onto slightly greased and floured cookie sheet. Bake at 350 degrees for 12 minutes until brown.
