ooh, yum. I did some black bean ones this week. I like spanish rice with them. I made mine with a whole bunch of stuff, like olives, jalepenos, green chillis, tomatoes, Homemade salsa, garlic, sweet peppers, etc. I cook the rice first and mix in what I have, along with salt, pepper, garlic powder, etc, LOTS of cumin. Ranch dip goes soooo good after it's cooked. Romaine salad with ranch is good too, or sliced avacado. .

We use several things depending on what we are in the mood for. 2 cans cream corn mixed with one small can chopped green chilies and topped with cheddar cheese.(just enough to cover top) microwave until cheese is melted or two cans of your favorite re fried beans covered in cheddar cheese.Microwave beans for 2 minutes stir then top with cheese and nuke for 1 minute more. Or just some chips and salsa or guacamole. Hope you enjoy your dinner.
