1 onion
2 peppers (i like to use 1 green one red, but this up to you)
2 chicken breasts (cut off as much of the fat as poss) diced
1 can peeled plum tomatoes pureed
for curry paste:
1 to two cloves of garlic, crushed
ginger finely chopped (about double amount of garlic)
1 tablespoon of curry powder (i like the balti curry powder)
chilli flakes (optional)
half juice of a lime or lemon
rub this on your chicken pieces.
Fry the onion, then add peppers, add the chicken, fry until no more pink shows on the chicken, then add the pureed tomatoes, add two and a bit slightly heaped teaspoons of sugar and a level teaspoon of salt. mix three teaspoons of cornflour with cold water, mix into some plain natural yoghurt, then add this to your curry. Simmer for 15 mins stirring occasionally, add extra seasoning to taste.

Yum, curry. I'm on a diet too. Use a whole bunch of sauteed veggies.(Saute them with butter flavor PAM) In a pan use a couple tablespoons of" I can't believe it's not butter" and fry a tablespoon or two of flour and as much green curry paste or yellow curry powder as you like. When it's browned add a can of light chicken broth or veggie broth. when sauce thickens mix in the veggies. You can use chicken too if you want, or not. Rice is better than rice noodles, or just omit rice and eat it alone. Or I put mine on Natural Grain brand Light toast, it's only 40 calories. Ps if you haven't tried I cant believe it's not butter spray you should, it has no calories. Not for the curry but just to help a fellow dieter, for light toast or baked potatoes. Curry itself is just a seasoning made up of 5-7 spices and has no calories. Its what you put it on that makes it fattening. Make curry shrimp, then you get the flavor of curry without a lot of calories. Or you could use chicken breast.

Stir in curry powder and tomato paste, cook 2 to 3 minutes. Stir in tomatoes, vegetable bouillon cube, mixed vegetables, water, salt and pepper to taste. Cook approximately 30 minutes until vegetables are well done (not crunchy). Sprinkle with fresh cilantro prior to serving.

look up a recipe ,dont add a lot of oil.just about half a tablespoon add skinless chicken and add loads of natural yogurtand plenty of veg.

Use less sauce, and no rice/naans.
Chicken or vegetables are good, use more of those.
