All of the apple pie recipes I have ever followed don't call for eggs.
Usually a good filling can be made with tart apples, cinnamon, sugar and a little flour tossed together, then dotted with sweet butter before baking.

A pastry crust doesn't require eggs either.

you don't need to brush the top with egg. it only makes it shiney. use ready made pie crust to make it easy. slice about 6 tart apples and sprinkle them a little lemon juice. mix together a little flour, sugar and cinnamon.mix it into the apples. put into crust and top with the second crust. poke holes for steam. bake about 400 til the crust is brown.

Well, I personally don't use any eggs in my apple pie. The crust should consist of a shortening (butter, margarine, Crisco, lard, etc.), flour, salt, & water. The filling usually has peeled, cored, sliced apples, seasoning (cinnamon, allspice, nutmeg, ginger, mace &/or ground cloves), lemon juice (to keep the apples from oxidizing), a pinch of cornstarch or flour, and butter slices. What are you using the egg for?
If you are using it in the filling(??) try tapioca to thicken. I prefer it to flour.
If you use it in the pastry, try using a tiny amount of vinegar in the ice water. (I use both vinegar and egg in mine.
If you are using it on the top to brown, milk brushed on towards the end of baking will do it too.
