Bacon and Canadian Bacon are 2 different things.

The Canadian Bacon story
Around the turn of the last century (or as they say, "during the war years"), England had a pork shortage. They imported side bacon from Canada, smoked it and termed it "Wiltshire Sides" in England. Due to this event Canadian bacon was made famous. Over time the United States believed that Canadian bacon was smoked back bacon although true Canadian bacon is not smoked. Our Canadian product is classified by the USDA as uncooked Canadian bacon and is Canadian #1 peameal back bacon.

We call bacon strips "bacon".
We call back bacon "back bacon" or "peameal bacon".

None of the major supermarket chains here in Ontario sell bacon labelled as "Canadian Bacon", nor have I ever heard friends or family say that they had Canadian Bacon for breakfast.

Being a former chef and having served all the mentioned bacon products, as stated we have strip bacon made from the pork belly, back bacon is a smoked boneless pork loin, formed after smoking into a round shape, peameal bacon is a cured, unsmoked pork loin, untrimmed and rolled in yellow cornmeal hence word "Peameal".

We also have craftman style bacons like double smoked
and a several non-pork one's like chicken, turkey, ham/turkey and veal made with veal brisket. There is also from a company named Canada Packers English Bacon, similar to Peameal only no corn meal and it comes sliced in packages.

I worked in various hotels/restaurants/clubs and catering firms over 20 yrs in the trade and saw almost everyone out there, we don't eat as much as in years gone by, but still enjoy it on occasion.

No, we don't. Bacon is the long thin stips, Canadian bacon feel more like ham, and is usually in rounded slices. And we can call it Canadian Bacon here too, among other names.

No, Canadian bacon is usually peameal bacon.
