I love Jicama and was wondering, since it's a tuber, like potatoes, would it make a good french fry?

Yes you can. Its just like using a potato. Ive made them and they are very good. Just sprinkle them with salt pepper and garlic powder when they come out of the oil.

never done it myself, but i would think that you should fry them at a low temp - 300 degrees - for alittle longer than potato because they tend to be harder. then drain and dry and do you second frying at 375 degrees to crisp them up and brown them. Probably wickedly good with a fruit salsa or sweet and sour sauce

I would bet that they're also good fried tempura style with an asian dipping sauce
